(Serves four)

1.Chop the meat into small cubes and fry it in a wide shallow pan in a little olive oil on medium heat.

2. When brown, add chopped peppers and stir for a few minutes, add pressed garlic, chopped runner beans and butter beans. 3. Peel the tomatoes, chop them and add to the mixture

4. Add rice, then enough water to cover the rice well (twice as much water as rice). Add the saffron based Paellero spices mix, salt and pepper.

5. Chop the artichokes in half and place with the other ingredientes till it's all well covered. Simmer on low heat until the rice is the required consistency (instructions on the bag say 15 min but I prefer a bit longer). Serve hot drizzled with lemon juice. You can mix and match the vegetables, leave some out or add peas instead.
